Vegetable & Ham Casserole

Time: 20 min prep + 30 min cook

Ingredients

Method

  1. Dice ham steaks & onions. Drain butter beans. Chop zucchini and egg plant.
  2. Heat oil and cook onion & ham steaks until onions are soft.
  3. Add zucchini, eggplant, crushed tomatoes, water, tomato paste. Simmer covered for ~15min.
  4. Add basil, butter beans. Simmer for ~5min.

Notes

Serve with mash or rice.
