Tuna Salad Rolls

Method
- Cut potatoes into cubes around 1cm. Dice mint.
- Combine potatoes, corn, mayo, mint.
- Rip off bits of lettuce and scoop mixture onto leaves with an extra dolop of mayo on top.
Notes
Serve with sprouts and beetroot.
