Tuna & Egg Mornay

Method
- Boil eggs (4min from putting kettle water in, rest for 4min in water) and coursely dice, dice onion and cappy. Drain tuna - set aside juice.
- Prepare topping mixture
- Melt butter, add onion and cappy. Fry till tender
- Add flour and gradually stir in milk (off heat). Bring to boil and stir until tickened. Keep mixing!
- Add tuna, ~50% of tuna juice, egg, cheese, salt & paper. Heat through.
- Pour into 2 litre baking dish. Sprinkle with topping
- Bake for ~30min @ 180 deg
Notes
500g shredded cheese pack should be ample
