Thai Chicken Rice

Method
- Add rice, water,chicken stock and 1tsp oil to rice cooker. Set it going.
- Meanwhile heat oil in a wok, over high heat. Add chicken. and onion and stir-fry for 5 minutes or until browned.
- Add fish sauce, lime juice and sugar to mince mixture. Stir-fry for 2-3 minutes or until heated through. Turn off.
- Stir through coriander and cooked rice.
- Serve mince mixture wrapped in lettuce leaves and sprinkled with nuts. OR Break up lettuce and mix in with bowl of rice.
- Add dressing to flavour.
