Thai Chicken Rice

Serves 4 Prep 10 min Cook 15 min

Method

  1. Add rice, water,chicken stock and 1tsp oil to rice cooker. Set it going.
  2. Meanwhile heat oil in a wok, over high heat. Add chicken. and onion and stir-fry for 5 minutes or until browned.
  3. Add fish sauce, lime juice and sugar to mince mixture. Stir-fry for 2-3 minutes or until heated through. Turn off.
  4. Stir through coriander and cooked rice.
  5. Serve mince mixture wrapped in lettuce leaves and sprinkled with nuts. OR Break up lettuce and mix in with bowl of rice.
  6. Add dressing to flavour.
