Mala Cake / Steamed Cake

Serves 4 Prep 10 min Cook 1 hr

Ingredients (Quick version)

2 cups gluten free plain flour (try 1.5 cups)

3 tsp yeast

1/2 cups sugar

1/2 cup milk

1/2 cup vegetable oil

3 eggs

Method (Quick version)

mix all together
line dish with baking paper
add cold water to steamer
add cake to dish place in steamer
cook medium-high (about 75%) for 50-60 mins
leave in steamer for 5-10 min to cool down without shrinking

Ingredients (Slow version)

1 cup gluten free plain flour

1 tsp yeast

1/3 cups sugar

1/2 cup milk

1/8 cup custard powder

2 eggs

1 1/2 Tbs melted butter or veg oil

Ingredients (Rice flour version)

2 cup glutinour rice flour (try 1.5 cup)

1 tsp yeast

1/3 cups sugar

1/8 cup milk

5 eggs

1 1/2 Tbs melted butter or veg oil

Method (Slow version & rice flour version)

mix all together except oil/butter
proof in warm oven ~1 hr
stir in oil/butter
prooof ~15 min
steamer with boiling water, cook high for 30 mins
leave in steamer for 5-10 min to cool down without shrinking
