Lamb Ratatouille

Serves: 4 Time: 30 min prep + 30 min cook

Method

  1. Dice onion, tomatoes, lamb, apple. Dice eggplant and zucchini and cover in salt for 20 mins, then rinse and dry. Put pasta on to cook.
  2. Heat oil, cook onion and lamb for ~5 min or till onion soft.
  3. Add eggplant, zicchini, tomatoes, paste, sugar, water. Cook for about 10 mins or till lamb tender and veggies are soft.
  4. Add in apples and pasta, stir till heated through.

Notes

Serve with pasta of mash
