Lamb Ratatouille
Serves: 4 Time: 30 min prep + 30 min cook

Method
- Dice onion, tomatoes, lamb, apple. Dice eggplant and zucchini and cover in salt for 20 mins, then rinse and dry. Put pasta on to cook.
- Heat oil, cook onion and lamb for ~5 min or till onion soft.
- Add eggplant, zicchini, tomatoes, paste, sugar, water. Cook for about 10 mins or till lamb tender and veggies are soft.
- Add in apples and pasta, stir till heated through.
Notes
Serve with pasta of mash
